Quick and filling summer salad

This healthy and delicious summer salad is easy to make and perfect to serve as a midday meal during the school holidays.
Make an activity out of it by roping in the kids to help prepare it! This way you get to bond with them and also keep them busy.

Chicken pasta summer salad (Serves 2-4)

You will need
2 cups cooked pasta (shells/ribbons)
2-3 shredded pieces of leftover chicken from your Sunday roast or 2-3 chicken breasts, seasoned, fried and shredded
1 cup cherry tomatoes sliced in half, or regular tomatoes diced into medium squares
1 cup cucumber, thinly sliced
1/3 cup onions rings thinly cut
1 carrot, peeled and grated
1/2  cup olives (optional)

DIY creamy salad dressing

½ cup plain double cream yoghurt
1 tablespoon lemon juice
2 tablespoons Worcestershire sauce
2 tablespoons olive oil
½ teaspoon mustard powder or bottled mustard
½ teaspoon crushed garlic
1 teaspoon dried herbs or a sprinkle of your favourite fresh herbs, like parsley, basil, chives or oregano


1. In a large bowl, mix together the cooked pasta, chicken, top with all the veg and herbs.
2. In a smaller bowl, add the ingredients for the DIY dressing and stir.
3. Add the dressing either to individual servings or pour over the entire salad.
