Microwave chocolate coffee cake

This coming World Chocolate Day (Sunday, 7 July) treat yourself with this super easy chocolate cake recipe from Chef Zola Nene.
Before studying to become a chef, Zola Nene worked in a restaurant overseas for two years before coming back to South Africa to enrol at the Institute of Culinary Arts in Stellenbosch.
Today, Zola is a well known celebrity chef and author. Her second book titled “Simply Zola – the Journey Continues”  is peppered with some adventurous recipes that will challenge you to try somethings new. It also features some classics with a Zola  twist, like this microwaveable chocolate coffee cake for one.

Ingredients (makes one)

60ml cake flour
2.5ml baking powder
30ml cocoa powder
15ml instant coffee powder
60ml icing sugar
1 egg
45ml milk
45ml vegetable oil
5ml vanilla
45ml chocolate chips

Method

1. In a 300ml microwaveable bowl, combine the flour, baking powder, cocoa powder, coffee powder, icing sugar, egg, milk, oil, vanilla and chocolate chips. Beat well with a whisk until smooth and blended. Microwave on high power for 90 seconds.
2. Top with a scoop of ice cream or custard (or both) to serve.
