Sweetcorn pap tart

This side dish is delicious with a lentil stew.


  • 2 cups mealie meal
  • 1 teaspoon salt
  • 1 can sweetcorn
  • ½ cup grated cheese
  • 1.5 litre water
  • black pepper for garnishing



1 Pour 1.5 litre water into a big pot on high heat , add salt and wait until water bubbles before adding your maize meal and stir rigorously.

2 Reduce heat to low and cook for thirty minutes stirring occasionally.

3 The pap should resemble porridge like texture and should not be too firm then slowly stir in your sweetcorn and cover for five minutes.

4 Spoon your pap into a well-greased oven dish and bake in the oven for 30 minutes on 180 C.

5 Remove from the oven and quickly sprinkle with cheese and black pepper. Then let set for 10 minutes before serving.
